spiced apple cider cocktail

This is a simple cocktail recipe using Monteith's Crushed Apple cider, and it's paired with cinnamon and dark spiced rum. It would also be perfect in the cooler months as it is just as good warmed up as it is over ice. Depending on how sweet you like your drinks, you may choose to leave out the brown sugar simple syrup. The thing I love most about this cocktail is you can make a big jug of it and share it with friends - the perfect addition to a summer Sunday session or BBQ on the deck! 

SERVES 4 

1/2 cup brown sugar 
1/2 cup water 
4 x bottles of Monteith's Crushed Apple cider 
4 x double shots of spiced dark rum
Apple slices
Lemon juice 
Cinnamon sticks 

METHOD | To make the brown sugar simple syrup, add the sugar and water to a small pan and heat over a medium/high heat, stirring until the sugar dissolves. Remove and set aside to cool. In a large jug, fill with ice, and mix in the cider and rum. Give it a try, and then add the brown sugar simple syrup to taste. To garnish, slice apples and drizzle with lemon juice to prevent them from browning, then add these to the jug with cinnamon sticks. Serve immediately. To try the warm version, heat the cider in a pot until warm, then pour into mugs. Add the rum and the brown sugar syrup to taste.
